Temperature and pH affect enzymes
Change temperature and pH and watch an enzyme’s activity rise to an optimum and then fall.
What to notice
Low temperature only slows (inactivates) an enzyme; high temperature destroys its shape (denaturation).
Key relation
Activity peaks at the optimum; extremes denature the protein
Try this
Find the pH where pepsin works best and compare it with trypsin.
What you can change
- Enzyme: choose Salivary amylase, Pepsin (stomach), Trypsin (small intestine)
- Temperature: 0 to 70 °C
- pH: 1 to 12
